AUSTRALIA’S most famous dessert is hitting early retirement.
There are few treats that have achieved a reputation quite like the Snow Egg. But if you haven’t yet tried the dessert for yourself, you best make a beeline for the innovative bit, with Sydney restaurant Quay announcing the Snow Egg will go into early retirement once the restaurant pauses service for a renovation.
From April 1 2018, Quay will shut its doors, and remove the Snow Egg from its menu. It’s a dessert that has now seen its fair share of the limelight, including a stint on MasterChef 2010, thanks to its ten-years on the menu.
More than half a million Snow Eggs have been made in this time, undergoing 20 different flavour changes yet remaining the dessert that 70 per cent of Quay diners will order.
The Snow Egg’s retirement is a part of Quay’s planned overhaul. Physically, the restaurant is set to revamp its dining room and kitchen in an effort to enhance guest experience, with a menu revamp to coincide with the physical.
“The snow egg has graced our menu for more than a decade, but this is a time of change and I want to be looking forward,” says chef Peter Gilmore of the move to start afresh. “It was a tough decision but removing it gives me the opportunity to grow and evolve the menu to give guests a new dining experience.”
“We know this is going to cause outrage, who knew one little dessert could have such a snow ball effect but rest assured whatever Peter comes up with will exceed eggspectations,” agrees Fink Group’s John Fink.
In an ode to its departure, Gilmore has created a new flavour for the final Snow Egg, the custard apple and Mangosteen fool, partnered with pear granita and custard apple ice cream. Dinners will have about three weeks to enjoy this take on the dessert before Quay closes its doors on April 1.
As a part of the restaurant’s (temporary) farewell, Quay will be hosting a retrospective dinner on March 28, showcasing Gilmore’s defining dishes from his 16 years at the restaurant. The indulgent meal will naturally finish with the Snow Egg. Reservations can now be made online.
